SUMMER COCKTAIL POPS
These cute boozy popsicles are perfect for any fun summer occasion. They're intentionally ~engineered~ to pack a fruity punch while still freezing up solid so that you don't have a mess on your hands. Grab some fresh fruit, wine, and gin, and have yourself a time.

Inactive time: 8 hours
Makes 6 3 oz popsicles
Ingredients:
10 blackberries, halved
1 tbsp sugar
3 oz gin
3 oz riesling (stick with something around 10% alcohol to keep them solid)
3 oz fresh lemon juice (roughly 3-4 lemons)
3 oz simple syrup (or to taste)
6 oz strawberry puree (roughly 7 strawberries, but measure to be sure)
1+1/2 tsp lemon zest
Instructions:
1.) In a small bowl, sprinkle your halved blackberries with 1 tbsp of sugar. Use a fork to lightly mash the berries, just until they're slightly broken and juicy.
2.) To make your simple syrup, combine equal parts sugar and water on the stove (1/2 a cup of each will be more than enough for this recipe) and heat on medium, stirring until sugar is dissolved. Remove from heat and let cool slightly.
3.) In a blender, combine gin, riesling, lemon juice, simple syrup, strawberry puree, and lemon zest. Pulse together briefly until ingredients are well combined.
4.) Use a spoon to place 2-3 blackberry halves into the bottom of each of 6 3 oz popsicle molds, or, if you don't have them, small paper cups. Carefully fill each mold. If your mold comes with something to hold popsicle sticks up, you can insert the sticks right away. If it doesn't or you're using paper cups, let these freeze up for about an hour until they're slightly solidified before inserting the popsicle sticks.
5.) Freeze overnight or for 8 hours. Remove these from the freezer just before consuming. If you used a popsicle mold, you can place the bottom in lukewarm water for a minute to loosen the popsicles before pulling them out. If you used paper cups, just rip them off the outside of the popsicle. Have fun!
