THE COMPASS
Next time you need a gorgeous, light aperitif, look no further than The Compass. Sage gives the familiar flavor of pink grapefruit an herbal lift, and sparkling wine adds a refreshing effervescence. This is an easy one to batch and serve throughout your next brunch or dinner.

Makes 1 cocktail
Ingredients:
1/2 oz sage simple syrup (1/2 cup fresh sage, 1 cup granulated sugar)
1+1/2 oz gin
2 oz pink grapefruit juice
Cava or other sparkling wine, chilled
Fresh sage for garnish
Instructions:
1.) To make the sage syrup, begin by simmering 1 cup granulated sugar and 1 cup water in a saucepan until the sugar is fully dissolved. Next, take the syrup off the heat and soak 1/2 cup of fresh sage in the warm syrup. The longer you let the syrup sit, the stronger it will be, but I recommend at least 15 minutes. Strain the syrup before use.
2.) In a cocktail shaker, combine gin, grapefruit juice, and sage syrup with ice. Shake for 10-15 seconds and strain into a coupe glass. Top with cava and garnish with a fresh sage leaf.
